Summer Lovin' Strawberry Pie
Hey there everyone! Krista here to share a very delicious early summer recipe with you!
Since down here in Louisiana it's strawberry season, I figured it was a deliciously wonderful time to make some pie with some fresh strawberries! They were all ripe and we couldn't eat them fast enough, so a plan was hatched! What you will need:
- 2 pie crusts - unbaked
- 1 1/4 cups white sugar
- 1/3 cup all purpose flour
- 1/2 tsp ground cinnamon
- 4 cups fresh strawberries (only 2 cases needed)
- 2 Tbs butter (I like imperial brand best)
First, set the oven to 425 degrees F, because here in America we don't use the metric system! But, if you really want to know it's 220 degrees C. Happy?
Second, go ahead and put one of the pie crusts in the bottom of your favorite pie pan. I absolutely love the pie dish my sister in-law gave us!
Third, now it's time to rinse those beautiful red berries and get out the cutting board and start slicing your strawberries. If you are in a rush, I guess you could use a food processor to chop your strawberries faster, but it's fun the old fashion way and you get beautiful pictures ;)...but hey, your choice!
Fourth, it's now time to mix up all the ingredients! First you want to combine the sugar, flour, and cinnamon. After you've done that then you can start stirring in the chopped strawberries. Make sure to coat them thoroughly. At this point you might want to add a pinch or two of cornstarch to make sure your filling comes out thick....trust me, because I didn't and mine came out
Finally, it's time to put the filling into the crust you've already put into the pie dish. After you've filled the bottom crust with all the delicious strawberry filling, go get those 2 Tbs of butter and put dots of butter all over that filling! Once that yummy butter is all over the top of your filling get out that second pie crust so that you can cover the pie!
It's a good idea to cut the crust to fit once you've put it on so that you don't have some weird over-hanging crust...I mean, who does that? So, go ahead and cut the crust to fit and then get crazy, get that fork out and add some flare to those edges! You heard me! :)
Lastly, it's time to put that delicious strawberry confection into the oven for 35 to 45 minutes, or, as they always say, until golden brown. Now let that aroma fill the house as you relax from all your chopping and mixing and fixing, you deserve it!
